I got asked to share this recipe so much after I posted a video of me making it on my instagram stories and I am so excited to share this Mongolian Beef Recipe with you today!

I am known for making the same 5 dinners that I feel comfortable cooking and David recently told me that I may need to think of some new things to make (sorry David.) Cooking is not fun for me, it does not come easy and honestly, I would rather have someone cook for me (who wouldn't) but really, cooking takes so long, so after an already long day of work I don't feel like coming home and cooking... just being honest here!

This Mongolian Beef recipe is pretty easy and it is so so yummy! What I love most about this recipe is that it makes enough for lunch the next day! That is a huge score when it comes to my schedule because I do not have time in the morning to make lunches! For the beef it calls for Flank Steak but after looking at the price of Flank Steak we opted for a thin cut Sirloin Tip and it was great! (You already know we are on that budget!) I also used a microwave rice cooker for our rice and if you do not own one of these bad boys you need to get one! It cooks your rice in 13 minutes! Probably not the safest and healthiest but so fast and good!

So while making this Mongolian beef I totally almost threw out a pan from accidentally burning my second batch a little, but I beat the pan and cleaned it up with a little elbow grease, as my mom likes to say! You guys, I WISH I would have taken a picture of this pan. It was bad and I didn't even want to try to clean it but I am a big girl now and I have to clean my mess!

I do have to say, be careful while cooking your steak because you coat it in cornstarch, once you place it in the pan, the cornstarch gets stuck to the oil and then to the pan and it does not clean up nicely... maybe I did something so wrong but it tasted good in the end!
